Gingerbread Granola

It’s no secret that breakfast is our favorite meal of the day, and in the spirit of the holidays we are adding a spicy twist to our breakfast bowls with this Gingerbread Granola recipe which offers a merrier start to your day one crunchy spoonful at a time.

Made with nuts, and Organic Oats (both rolled and quick oats) that all come together with the sticky goodness of candied ginger, and the sweetness of maple syrup-this is a recipe that requires very little effort for a whole lot of flavor.

This Gingerbread Granola makes for the perfect holiday breakfast, go-to-snack, eatable gift and dessert topping that is both vegan and gluten-free. The warm spices and roasted nuts will deck the halls of your home and captivate your taste buds with a sprinkle of spice and everything nice this holiday season!

Ingredients:

1 cup One Degree Organics Rolled Oats
1 cup One Degree Organics Quick Oats
¾ cup raw nuts of choice
½ tsp sea salt
½ tsp cinnamon
¼ tsp ground ginger
¼ cup olive oil
3 Tbsp maple syrup
2 Tbsp molasses
¾ tsp vanilla extract
½ cup chopped candied ginger

Directions:

Preheat oven to 350F.

Line a large baking sheet with parchment paper.

In a large mixing bowl, combine both the quick and rolled oats, nuts, salt, cinnamon, and ginger until all the ingredients are mixed together. To this pour in the olive oil, maple syrup, molasses, and vanilla extract and mix together until smooth.

Using a spatula spread the granola evenly on a baking sheet and evenly press it down to ensure even heat distribution when baking.

Bake the granola mixture for 20 minutes.

Take the granola out of the oven and stir in the ginger candies. Using a spatula spread the mixture evenly across the baking sheet and bake for an additional 3 minutes. Let the granola cool down completely before serving.

Tips:

For those who enjoy big clusters in their granola it is important to let the granola rest and cool down completely once it comes out the oven. This will allow time for the maple syrup and molasseses to harden properly before breaking down and storing in an airtight container.
