Sprouted Oat and Wheat Brown Bread Rolls

Ingredients:
1/4 cup of One Degree Organics Oat flour
1 ¼ warm cup water
¼ cup vegan honey/maple syrup
2 tablespoon molasses
1 ¾ cup Whole Wheat Flour
2 cup white bread flour
1 ½ tablespoon cocoa powder
1 ½ tablespoon brown sugar
1 teaspoon salt
2 teaspoon instant dry yeast
3 tablespoon softened vegan butter
Cornmeal for dusting bottom optional
One Degree Organics Sprouted Quick Oats for topping
Directions:
In a medium bowl, combine the lukewarm water, vegan honey/maple syrup, and molasses, stirring until both the honey and molasses are completely dissolved. Add One Degree Organics quick or whole oats to a blender and make oat flour. Or use One Degree Organics Sprouted Oat Flour. In a large mixing bowl, whisk together the bread flour, whole wheat flour, oat flour, salt, sugar, cocoa powder, and yeast.
Pour the honey mixture into the flour blend and stir until a rough dough begins to form. Add the softened vegan butter and knead the dough for about 8-10 minutes in a stand mixer, or 10-15 minutes by hand, until the dough is smooth and slightly tacky. It should stick to the bottom of the bowl without clinging to your fingers.Transfer the dough to a clean bowl, covering it with a damp towel or silicone mat. Allow the dough to rise in a warm place for 1-2 hours or until it doubles in size – whichever happens first.
Once the dough has risen, punch it down. Lightly flour your work surface, then divide the dough into four equal portions. Shape each portion by flattening it into a rectangle and rolling it tightly into a cylinder. Pinch along the seam to seal.
Place the shaped dough on a baking sheet lined with a silicone mat and dust with cornmeal if desired. Leave enough space between them to allow them to rise. Sprinkle with One Degree Organics quick or whole oats on top, cover loosely a damp towel, and let the loaves rise for another 40 minutes, or until they look puffed and nearly doubled
Preheat your oven to 350°F. Once ready, uncover the loaves and bake for 30-35 minutes. Let the loaves cool for about 30 minutes before eating.
